Makes approximately 12
Ingredients:
6 large Medjool dates, pitted
2 1/2 tablespoons water
2 tablespoons pure maple syrup
1 teaspoon vanilla extract
3/4 cup oats
3/4 cup peanut butter
2 tablespoons chia seeds
2 tablespoons cacao nibs
Directions:
In a large bowl, stir together the oats, chia seeds, and cacao nibs. Set aside.
Add dates and water to the bowl of a food processor and process until the dates begin to break down and form a paste.
Add in maple syrup, vanilla, and peanut butter. Process again until it starts to look like a wet cookie dough and ingredients are combined.
Add wet ingredients to dry ingredients and mix together. (I use wet hands to mix!)
Form dough into 1" balls and store in an airtight container in the fridge. (Last up to 7 days in refrigerator.)
